Thank you to everyone who has checked out my blog over the past month. I think this calls for a late night celebratory post! How about some delicious no-bake cookies?
My mom has been making Special K bars for as long as I can remember. Apparently it’s a recipe that came from my dad’s mother years ago. This dessert is easy to whip together in a pinch and requires few ingredients that can be stored in the cupboard for a rainy day. Those are the best kind of recipes in my opinion.
My only problem with these bars is that I can’t stop eating them. They’re sweet, and chocolaty, and full of peanut butter. What’s not to like?
1 cup peanut butter
1 cup Karo syrup
1 cup brown sugar
7-8 cups Special K cereal
1 bag milk chocolate chips
1 bag butterscotch morsels
Step One: Mix peanut butter, brown sugar, and Karo syrup in a large bowl. Microwave for 3 minutes.
Step Two: Once sugar is dissolved and mixture is smooth pour cereal into bowl. Stir gently to coat cereal.
Step Three: Scoop mixture into a 9×13 pan. Press cereal into pan with a potato masher.
Step Four: In a medium bowl, microwave chocolate chips and butterscotch morsels for 4 minutes or until melted. Stir periodically. When chocolate mixture is smooth, pour over cereal and spread evenly with a spatula.
Step Five: Allow topping to harden at room temperature and enjoy!
