My sister-in-law is expecting a baby girl any day now, and one thing she’s been craving more than usual lately is her grandmother Edna’s Peanut Butter Bar recipe. She just introduced me to the recipe a few weeks ago, and I’ve got to say that this baby’s got good taste in food!
I love peanut butter, and these cookie bars taste amazingly like the Reese’s Peanut Butter Cup Eggs that are in stores around Easter time. Plus, they’re so simple to make! They could very easily be turned into no-bake cookies if you decided to microwave the chocolate chips instead of melting them in the oven. Either way, these cookies are sure to be a hit!
2 Cups graham cracker crumbs
3 Cups powdered sugar
1 Cup peanut butter
1 Cup melted butter
Step One: Set oven to 350 degrees. In a large bowl, stir together crumbs, powdered sugar, peanut butter, and melted butter.
Step Two: Using a flat spatula or clean hands, press the mixture firmly into a 9×13 inch pan.
Step Three: Scatter chocolate chips over the peanut butter mixture and place in the oven until chocolate chips are melted. I think it took about 5 minutes.
Step Four: Using a spatula, smooth out the melted chocolate. (Can you tell my sister-in-law helped with this part?) Allow chocolate to set for a while before eating, to avoid a chocolaty mess. Placing the pan in the fridge or freezer can shorten the wait.
Edna’s Peanut butter bars are great with a tall glass of milk!
